SUPER BOWL 2014- DENVER BRONCOS VS SEATLLE SEAHAWKS-MANNING VS WILSON


I think everyone is ready for the Big Game!  Denver Broncos Vs Seattle Seahawks.

In my previous post, I chose recipes appropriate for the colleges the 2 quarterbacks attended.

Denver Broncos Tailgating means barbecuing (as in most places).  In Denver it is all about Beef Brisket.

 Since it is winter time and cold in most places I have chosen the slow cooker method for preparing the meat.  You won’t have to bundle up to cook the meat outdoors.

3-5 pound beef brisket

1/2 cup Worcestershire

1 can beer

1/2 cup soy sauce

Garlic to taste

Cook 6-8 hours on low in a slow cooker.  Remove fat from brisket and shred into small pieces.  Serve on your favorite buns.  Top with Kansas City Style BBQ sauce  OR…

In honor of Peyton Manning’s  Tennessee college days I include a BBQ Sauce from the Knoxville Junior League’s “Dining In The Smoky Mountain Mist” cookbook.   The recipe is from an old friend of mine.

BARBECUE SAUCE 

1 (14-ounce) bottle catsup

1/2 (12-ounce) bottle chili sauce

1/4 cup prepared mustard

1/2 tablespoon dry mustard

1/2 tablespoon soy sauce

3/4 cup packed brown sugar

1 tablespoon vegetable oil

1 tablespoon pepper

3/4 cup red wine vinegar

1/2 cup lemon juice

1/4 cup steak sauce

2 tablespoons worcestershire sauce

dash of Tabasco sauce

1/2 can of  beer

Combine all ingredients and chill.  Store in refrigerator.

Makes about 6 cups.

“Dining In The Smoky Mountain Mist”  is an “oldie but goodie.  Their Grilled Pork Tenderloin is one of my favorites.

 For the Seattle Seahawks, I chose a cold weather, Great Northern Bean Soup.

White Bean, Sausage and Kale Soup is a winner for cold game days.

WHITE BEAN, SAUSAGE AND KALE SOUP

 2 pounds dried white beans, rinsed and drained as per package

2 sweet onions, chopped

1 bag small carrots, chopped

olive oil

garlic, minced

2 1/2 quarts chicken broth

2 bay leaves

2 teaspoons chopped rosemary

1 teaspoon smoked chipotle red pepper (ground)

1 can diced tomatoes

1 pound package kielbasa sausage sliced and sauteed

Fresh kale, chopped

Saute onions and carrots in olive oil.   Add garlic and cook for 1 minute.  Add remaining ingredients. Bring to boil, then simmer at least 1 hour.  Add kale for last 5 minutes of cooking.

 So good on cold days!

Apples are indigenous to Washington State.  James created this recipe using Granny Smith apples, but you can choose the ones you prefer.

Spring mix lettuces

Dried cranberries

Almonds

Granny Smith apples, sliced

Parmesan cheese, grated

Toss with your favor vinaigrette

 I love a Blood Orange Olive Oil with Cranberry Pear White Balsamic Vinegar from The Ancient Olive Store in St. Augustine!
