REFRESHING WATERMELON AND TOMATO SALAD…PERFECT FOR THE DOG DAYS OF SUMMER


On a recent trip to the North Carolina mountains, fleeing the hot, humidity heavy Florida weather, I discovered a great interpretation of that old watermelon salad… a refreshing watermelon plus  tomatoes  with cool cucumbers salad…perfect for the Dog Days of Summer; which  usually means the hottest time of the year; those hot, sultry days between the end of July and the end of August.  Why is it called the dog days of summer?  One explanation is that it is so hot that mad dogs come out!  I’m not sure about mad dogs, but I am sure I enjoy eating cold foods, ones that don’t take a lot of time and energy to prepare in the heat of the summer.

What could be cooler than watermelon?  It is so refreshing when served ice cold.

WATERMELON AND TOMATO SALAD WITH CUCUMBERS AND PROSCIUTTO

This new one is special as it includes many refreshingly cool ingredients; watermelon, ripe tomatoes, cucumber, prosciutto, basil, and feta cheese. It is perfect for these dog days of summer.  ENJOY!

Ingredients

  • watermelon wedges
  • tomato slices, halved
  • cucumber slices, halved
  • prosciutto slices, rolled in rosettes
  • feta cheese, crumbled
  • balsamic glaze
  • fresh basil

Instructions

  1. Slice watermelon into wedges.
  2. Slice tomatoes in halves.
  3. Slice cucumber in halves.
  4. Roll prosciutto slices into rosettes.
  5. Sprinkle with crumbled feta cheese.
  6. Drizzle with balsamic glaze.
  7. Garnish with chopped basil.
This is a delightful version of watermelon salad.  So cool and refreshing in the summer.
