Here’s what’s cookin’ in the North Carolina Mountains … Mountain Trout


Wow! That was a hard title to get out with 3 apostrophes!

As many of you saw on my instagram feed, we are cooking mountain trout on the grill…in a cast iron skillet.

This skillet is special because it is the one my father used for many years to cook his fish…outside…on the grill.

Mom loved it because there were no oil splatters or kitchen odors in the house…All outside on the grill.

Dad would catch his fish (bass & brim) in our pond, clean and scale the fish,  dredge them in a little flour plus cornmeal, and then fry them in oil in the skillet on the grill!

We now use this skillet to grill steaks (heavily peppered), fish or shrimp, hamburgers, and to cook our mountain trout.

Love this photo, taken by James on my antique farm table that has weathered many years on our screened porch.  It is a table with an open shelf and 2 door cabinet below.  We use it as our bar during summer parties.  I bought it from The Plantation Shop on Amelia Island…one of my favorite stores.

Ingredients

  • 4 whole trout, filleted with heads off
  • 4 scallions
  • butter
  • pepper
  • 8 bacon slices
  • kitchen twine

Instructions

  1. Spread butter on flesh side of rainbow trout fillets.
  2. Place a spring onion and sprinkle freshly ground black pepper on fillets.
  3. Fold trout back in half and place a bacon slice on each skin side, top and bottom.
  4. Secure in 3 places with kitchen string.
  5. Grill over medium high heat 15-20 minutes.
  6. Time may vary depending on how many fillets you use.

Notes

Kathy's comments...I have cooked in a cast iron skillet on the grill or directly on the grill.

A word of caution.  Dave and  I tried to grill 12 at one time and almost burned our house down.  The grill was located next to our screened porch under an upper deck.  The bacon drippings caused the fire to flare up and singed the railing.    The trout actually survived.  A little charred, but delicious on the inside!

    Great story and beautiful pictures. I too inherited cast iron from my mother which I treasure. Now it’s almost impossible to find these unusual cast iron pieces.

    • I am so happy to hear you also have special cast iron pieces. Isn’t it wonderful to see the renewed interest in cooking with cast iron? I also saw an article on golfer, Davis Love III about his great collection of old cast iron.
