OLE MISS COMES TO THE SWAMP THIS SATURDAY


Last week I talked about orange in the Swamp.  This week I think there will be some red and blue and a number 3 ranking in the visitors section of the Ole Swamp.

Ole Miss tailgating fan, Lillian Carson gave me this recipe after spending time in the North Carolina mountains.  She found local smoked trout at the store and devised this recipe.

 Cardinal Red and Blue colored napkins and straws.

I served up a Fall Hard Cider in retro red wine glasses in honor of Ole Miss’ longstanding tailgating traditions in The Grove.  They know how to bring out the linens, silver, chandeliers and fancy glasses at Ole Miss.

Ingredients

  • 2 packages Smoked Trout
  • 1 container whipped Cream Cheese
  • 2 Tablespoons plain Greek Yogurt
  • 1 small cucumber or half large diced, peeled
  • Fresh Dill, chopped – one bunch
  • 1 lemon, squeezed

Instructions

  1. Mix cream cheese and Greek yogurt well.
  2. Add cucumber and dill. (I didn't use all the dill.)
  3. Tear trout into small pieces and stir well.
  4. Squeeze lemon and salt and pepper to taste.

Notes

Serve with pita chips or crostini

 A word of caution when disposing of smoked trout dip (as if there is any left)!

In a previouse post about dealing with bears in the North Carolina mountains:

BEARS  LIKE SMOKED TROUT TOO!

I was sitting on our screened porch after dinner, enjoying the mountain air with a glass of wine.

  I heard what sounded like the garbage being picked up.  Lots of chinking of bottles.  I could not see our garbage area.

The only place I could view the garbage area off the carport was from my bathroom window.  I peered out the window and saw a large bear trashing several large garbage cans and garbage bags.  Beer bottles (from a weekend party) were rolling down the driveway.  I called my husband, Dave in Florida to ask, “What do I do???”

As a child sitting around a campfire, my father  always told me that a fire would keep wild animals away.  I also remembered in the Old Yeller movie the family built a large fire to keep wild animals at bay.  I ran to the laundry room and grabbed the sparklers left over from our 4th of July party (hence all the beer bottles).  Keeping Dave on the phone line, I moved up the stairs to our guest bedroom, with its own deck.

 I lit a couple of sparklers and threw them down to the garbage area.  The bear ran up to the the hammock area just off the balcony dragging a garbage bag with her.  I lit a few more sparklers throwing them into the clearing.  The bear did not like the sparklers and ran off into the woods.  Even though I was relieved the bear had departed, I knew I could not leave all that trash lying around on the carport.  With Dave still on the line I lit more sparklers and laid them on the carport while I frantically picked up the trash.  I told Dave,”If you hear me scream call 911.

THE CULPRIT OF THE BEAR ACTIVITY. REMEMBER THE BAG OF TRASH THE BEAR DRAGGED TO THE HAMMOCK CLEARING?

I found the incriminating evidence of the Sunburst Trout Dip container in the clearing.

I HAD THROWN AWAY LEFT OVER SMOKED TROUT DIP AND THE BEAR LOVED IT!

Back to the Ole Swamp.

I like a good Tzatziki and the trout dip minus the trout reminded me of tasty cucumber dips.

I managed to find my blue napkins to add to the orange. (Tongue in cheek, I am still not over last week’s game-Go Big Orange).

Tzatziki

Serving Size:

Ingredients

  • 16 ounces sour cream
  • 1 cucumber, unpeeled and seeded
  • 1 lemon freshly squeezed
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil extra virgin
  • 1/2 tablespoon fresh dill
  • freshly ground pepper
  • little salt to taste

Instructions

  1. Grate the cucumber and drain. Squeeze the cucumber in a paper napkin to get as much juice out as possible.
  2. Mix in the remainder of the ingredients.
  3. Drizzle a little olive oil on top and plop an olive on top.
  4. Serve with pita bread or pita chips.

Notes

Could substitute Greek yogurt for some of the sour cream.

Saturday will be busy!!! Dave’s Duke Delts are coming to Amelia and  we will be celebrating lots of schools and watching football on The Big Screen.

Georgia/Alabama what a matchup! (And please click here to see the outpouring of Georgia’s caring school and community when a serious football injury occurs).  We all love football, but with a serious injury…it puts our game and loyalties in perspective.  We hope for a full recovery for Devon Gales.
