The fresh thyme and red bell pepper give this guacamole a fresh twist.

Coarsely mash avocados: stir in lemon juice. Fold in remaining ingredients. Seal in an airtight container with a piece of plastic wrap against the surface of the guacamole. Keep cool. Serve with tortilla chips.

Serves 6 to 8.

2 avocados, peeled and pitted

1 tablespoon fresh lemon juice

1/2 cup red bell pepper, finely diced

1/2 cup small cherry tomatoes
(cut in quarters)

1/4 cup green onion, thinly sliced

3 cloves garlic, finely chopped

1/2 teaspoon fresh thyme, chopped

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/8 teaspoon cayenne pepper
