TATER TOT CUPS

Ingredients
- 1 bag 32 ounce frozen tater tots
- cooked bacon, chopped
- sharp cheddar cheese, shredded
- sour cream
- chives
Instructions
- Preheat oven to 425º.
- Grease muffin pan with olive oil spray.
- Place 4-5 tater tots in each muffin tin.
- Bake for 10 minutes, remove from oven and using a small glass or muddler, press down to create a cup shape.
- Sprinkle with cheddar cheese and bake another 15 minutes.
- Remove from oven and cool slightly. Using a butter knife, remove potato cups.
- Add bacon, sour cream and chives.
Kathy’s Notes
These make large appetizers. I tried using smaller muffin tins and mini tater tots, but you have to be careful with cheese sticking to tins.
